Quail Club w/ North Bridger Bison | April 25

My friend Matt Skoglund, along with his family, operates a bison ranch just north of Bozeman, Montana. They planned a family vacation to come out to California for a family surf / beach trip. 

In addition to pointing them in the right direction to find some fun waves, we wanted to host them for one of our wild fish and game potluck dinners.

I love any time we can get a group of people together for a shared meal, but this one was extra special. 

Matt was generous enough to bring a big ol’ bison tenderloin to share which we did in the sous vide for 4 hours at 127 F, and then seared hot and fast on the blackstone. Nothing fancy, just salt and pepper… and I cannot properly describe how good this steak was.

The flavor and texture was unreal. The creativity and generosity of this community continues to amaze me. So glad we got to share this evening with Matt and the Skoglund fam.
