August '23 | Wild Fish & Game Dinner

On Monday night, we gathered, as we regularly do, to dine on food sourced from the wild—and participate in all of the story telling and idea swapping that accompanies it. 

Inspired by the recent boom in pelagic fishing off our local coast, our culinary director Jesse Inman cooked up a big batch of rice and all the accoutrements for Donburi; Japanese-style rice bowls. 

Among the other contributions were:

  • Axis Deer Meatballs
  • Whitetail Meatballs
  • Bluefin Toro
  • Yellowfin Tuna Sushi
  • Wild Pork Butt
  • Axis Deer Meat Sauce
