Bison Sausage & Wild Mushroom Pizza

Pizza Fridays needs to be a regular thing.  

Spice up your ground bison (or venison) with this easy Italian Sausage spice recipe:

  • 2 pounds ground Bison (or Venison)
  • 1 tablespoon minced garlic
  • 2 teaspoons dried parsley
  • 2 teaspoons Italian seasoning
  • 2 teaspoons salt
  • 1.5 teaspoons black pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon minced onions 
  • 1/2 teaspoon whole fennel seed
  • 1/2 teaspoon paprika

Mix all of your spices together in a small mixing bowl.  Then brown your meat in a hot pan. [Tips for Properly Browning Ground Meat]

Once the meat is thoroughly browned, add your spices and mix well. Set aside, with your other pizza toppings.  

We went to our favorite local pizza joint and asked for some pre-portioned, raw pizza dough to go. 

For this particular pizza, we opted to go with:

  • Pesto
  • Fresh Mozzarella 
  • Bison Italian Sausage
  • Fresh Basil
  • ...and then topped it after the cook with Sautéed Chanterelles & Pine Mushrooms

If you're going to use an Ooni or Gozney pizza oven, don't overdo it on the toppings.  Just a nice, thin base of the pesto, then add your toppings, ensuring you use plenty of flour to keep your dough from sticking to your pizza peel.

This is one of the best ways of making restaurant-quality pizza at home.

Just a few minutes at medium-high heat in the Ooni, and this pizza is done!

Since the mushrooms were already pretty crispy from their own sauté, we decided to add them right after the pizza came out of the oven.

 Your Bison Italian Sausage Pizza is now ready to enjoy.

Additional optional toppings: Red Pepper Flakes, Maldon Sea Salt, etc...

Cut into slices, and be ready to get started on the next pizza, because the first one will go quickly!
